Just at a glance , use your stock heads and get them ported , aim for 10.5 comp.
Steer clear of the 635 cam, Instead look at the s&s 585. Forget about the new cam plate and pump unless yours are worn .

Why do you say to stay away from the 635 I would think that with the 66mm intake it will flow really well
Below is from S&S that's why I chose the 635.

585: Designed for 88 to 95 CID engines with compression ratios from 9.7:1 to 10.5:1 and 100 to 124 CID engines from 9:1 to 10:1 compression. Provides massive horsepower and torque increases starting at 3000rpm and holds steady all the way to redline. 3500-6000 rpm for 88" - 103" engines and 2500-5500 for larger engines.

635HO: This is the cam set for the rider looking for maximum horsepower. With .635" lift, your engine can really breath. They’ll work even better when you have your cylinder heads CNC ported in Step 4. High lift S&S valve springs are required.

I live in Qatar at the moment so getting my heads ported is not possible.
I plan to change oil pump and cam plate as it it gets HOT here the few extra PSI of oil pressure will help, I do have a fan assisted oil cooler already.

Late to the party but been some good points passed on, I'm no builder but a few  more things to mull over, those 635's have low 40's intake close and a high TDC lift so you would need to make sure of valve to piston and valve to valve clearances, the comp could prove difficult to tune where you are, a 110 (as that's what I'm thinking you are going to) can only pump so much air, a 58mm TB and 5.7 injectors is all you would need, the 5.7's make fine tuning easier, you could buy ported heads on line to suit a cam that works for your riding style, nothing really needs to be out of one manufacturers catalogue, you could even talk to a real builder and get the lot all matched up and ready to bolt on with a couple of unknowns, but you were going that way already and even those can be overcome with some patience and technical communication with the machinist.
    Blabbering.
    Out.

Qatar is a damn hot place that is for sure,[was there a few weeks back]  if you are going with 10.2:1, go with the 625 cam and use the 55°close to bleed some cylinder pressure.
A 585 will make high cranking pressure which you need to stay away from, also The S&S heads flow pretty good at .600"+ lift so lift the valve there for sure.
The Super Stock head is .640" lift ready [confirm from your supplier first before purchase] .

Use the normal style S&S adjustable pushrods, I'm not a fan of quickee pushrods, they weigh like a brick and have long flex points.

An oil cooler, and larger capacity pump will help ,another thing is the S&S cam plate is o ringed to the cases which helps control internal bleed.

As for the injectors, you might want to find  a dyno driver first and see what the engine asks for before investing. Get the thing dyno'd, do not run a fresh motor on a self tune system in that place, it will be the ping master from hell.

Get a really really good air cleaner, if you can run a K&N oiled pre cleaner foam even better, that place has talc in the air.

    Cheers.
